Ingredients
- 3 small yellow onions
- 1 cup beer I used Yuengling Black & Tan
- 1 tbs Apple Cider Vinegar
- 1 cup flour
- 1 tsp baking powder
- 1 large egg
- 0.5 cup milk I used 1%
- 1 cup breadcrumbs
- 1 cup cracker meal You can skip these and use all breadcrumbs
- Salt
- Pepper
Instructions
- Cut onions into rings about 1/4 inch thick.
- Place rings in a bowl or Tupperware container (be sure it has a lid) with beer, apple cider vinegar and a dash of salt and pepper Be sure all rings are covered in liquid. Let soak in the refrigerator for 1 hour.
- Remove rings to a wire rack. (Place newspaper underneath for easy cleanup.). Pour liquid into a measuring cup to use later.
- In your bowl/container add flour, baking powder, and a little salt and pepper. Add rings and put the lid on the container. Shake until all rings are covered.
- Remove rings back to the wire rack, shaking off extra flour.
- Add egg and milk to the container with the leftover flour. Continue adding the leftover beer mixture until you have a batter that is the consistency of pancake batter.
- Put rings back into the container and shake until coated with batter, then return the rings to the wire rack.
- Rinse out container and dry.
- Add breadcrumb and cracker meal to your container. Place a few rings into the container at a time and toss until coated. Then return the rings back to the wire rack.
- Place small batches of onion rings into a deep fryer and fry about 2 minutes. (They are ready to remove when you hear the oil get louder!)
- Remove from oil and let drain on a paper towel.
- Continue frying small batches of onion rings until all rings have been fried.
- Eat!
I’d love to hear what you think of this recipe!
